The Sauvignon Blanc grapes for this wine come from Le Clos De Chaudenay (the “hot spot”), a single vineyard parcel of 40-year-old vines on a southwest facing slope near the village of Verdigny. During production, the wine is vinified without malolactic fermentation, which preserves the bright, fresh fruit flavors of the grapes.  In the glass, the wine is a limpid, pale yellow-green color, while the vibrant nose gives aromas of ripe green apples, quince, pink grapefruit, cassis, thyme, and hints of fresh fennel. On the palate, the wine is rich and lush, with flavors of pink grapefruit and white nectarines, as well as a lengthy, elegant finish of saline minerality.
